Dickson's Farmstand Meats is delighted to partner with Blue Smoke, the iconic Southern-inspired restaurant with two NYC locations that’s part of Danny Meyer’s Union Square Hospitality Group. Blue Smoke’s Executive Chef Jean-Paul Bourgeois is taking our freshly slaughtered, Amish-Raised turkeys, dry-brining them for 24 hours with his special rub, and then smoking them over apple and cherry woods.
“At Blue Smoke, sourcing the ingredients we use is incredibly important to us. Partnering with Dickson’s, who has led the move to source natural, humanely-raised, high quality meat from local farms, was a natural fit with what we do,” said Chef Bourgeois. Prepared by Blue Smoke’s culinary team, these special fully-cooked smoked turkeys are packed with flavor and make the perfect centerpiece to a Thanksgiving feast. Dickson's is thrilled to work with Jean-Paul and the Blue Smoke team to bring these special birds to your holiday table!
Blue Smoke is also offering a 10% discount on their delicious pies for everyone who orders a Smoked Turkey from Dickson’s Farmstead Meats! Pumpkin, Bourbon Pecan, and Apple Crumb for $30/pie, $58/two, $84/three and just $27/pie when you order four or more. Blue Smoke pies can be ordered through 11/25 at 6:00PM and should be picked up at Blue Smoke by 11/26. Our smoked turkeys are fully cooked and simply need to be reheated for service (or served room temp if you prefer).  See Heating Instructions Below.

Add Farmstand Stuffing Kit ($30) -Everything you need to make delicious, homemade stuffing for 10-12 people is included. The kit has stock, caramelized onions, cubed, crusty bread (from Amy's of course!) and classic sage sausage. It even comes with foolproof instructions for quick assembly and cooking.

Dave's Giblet Gravy ($20) -One quart of classic turkey gravy (enough for 10-12 servings) made from scratch right here in our kitchen. Our gravy is rich, smooth and - best of all - done before the bird even goes in the oven.


Size -12-14lbs.  (Note - You're Smoked Turkey will not be less than 12 lbs, but we cannot guarantee exact size due to bird-to-bird variations and cooking-loss).

Pickup- All pickup orders can be picked up at our Chelsea Market location during regular business hours (Select Tuesday 11/25 or Wednesday 11/26 pickup at checkout)

Shipping- Thanksgiving shipments will go out Monday Nov 24 & Tuesday Nov 25th for FedEx overnight delivery. If you need your package to go out on a specific date (Monday or Tuesday) to ensure someone is available to receive, Let us know ASAP!  For other special shipping concerns/requests call us at 212-242-2630.

Our turkeys, like all of our poultry, come from Amish Farms in Lancaster, PA.  The birds are brought live to a small NJ facility each morning and are slaughtered for us by Goffle Rd Poultry Farm  to ensure freshness and quality.  Barn-raised (cage free) without the use of hormones or antibiotics and fed a purely vegetarian diet, you won't think twice about ditching frozen supermarket turkeys ever again.

Serving Instructions

Our smoked turkeys are fully cooked and simply need to be reheated for service (or served room temp if you prefer).
Room Temp/Cold- Simply remove from refrigerator 3 hours before service, then slice and serve!
Hot- To serve the whole smoked turkey turkey hot, place in a sealed roaster pan or wrapped in foil and heated at a medium temperature (approx. 325 F.) for approximately 10 to 15 minutes per pound (2-2.5hours)

Stuffing- Smoked turkey cannot be stuffed while reheating as it will limit airflow and cause your bird to dry out (and take much longer).  Stuffing should be made separately.
