Smoked Turkey (cooked)

Back by popular demand, we're offering a fully-cooked, smoked turkey!  This year our birds will be smoked in partnership with our friends over at Blue Smoke!  The same freshly killed, Amish-Raised turkeys are dry-brined for 24 hours with our special rub, and smoked over apple and cherry woods.   We're thrilled to bring you the Best Smoked Turkey On The Planet!  As featured in NY Magazine & NY Times.

Our smoked turkeys are fully cooked and simply need to be reheated for service (or served room temp if you prefer).  See Heating Instructions Below.

Add Farmstand Stuffing Kit ($30) -Everything you need to make delicious, homemade stuffing for 10-12 people is included. The kit has stock, caramelized onions, cubed, crusty bread (from Amy's of course!) and classic sage sausage. It even comes with foolproof instructions for quick assembly and cooking.

Chris' Giblet Gravy ($20) -One quart of classic turkey gravy (enough for 10-12 servings) made from scratch right here in our kitchen. Our gravy is rich, smooth and - best of all - done before the bird even goes in the oven.

Size -12-14lbs.  (Note - You're Smoked Turkey will not be less than 12 lbs, but we cannot guarantee exact size due to bird-to-bird variations and cooking-loss).
Pickup- All pickup orders can be picked up at our Chelsea Market location during regular business hours (Select Tuesday 11/24 or Wednesday 11/25 pickup at checkout)
Shipping- Thanksgiving shipments will go out Monday Nov 23 & Tuesday Nov 24th for FedEx overnight delivery. If you need your package to go out on a specific date (Monday or Tuesday) to ensure someone is available to receive, Let us know ASAP!  For other special shipping concerns/requests call us at 212-242-2630.
 

Our turkeys come from Amish Farms in Lancaster, PA.  The birds are brought live to a small NJ facility each morning and are slaughtered for us by Goffle Rd Poultry Farm  to ensure freshness and quality.  Barn-raised (cage free) without the use of hormones or antibiotics and fed a purely vegetarian diet, you won't think twice about ditching frozen supermarket turkeys ever again.

Serving Instructions

Our smoked turkeys are fully cooked and simply need to be reheated for service (or served room temp if you prefer).
 
Room Temp/Cold- Simply remove from refrigerator 3 hours before service, then slice and serve!
 
Hot- To serve the whole smoked turkey turkey hot, place in a sealed roaster pan or wrapped in foil and heated at a medium temperature (approx. 325 F.) for approximately 10 to 15 minutes per pound (2-2.5hours)

Stuffing- Smoked turkey cannot be stuffed while reheating as it will limit airflow and cause your bird to dry out (and take much longer).  Stuffing should be made separately.

Our beef, pork, lamb, and poultry are sourced from small, family farms in upstate New York that are carefully handpicked for their humanely-raised, high-quality animals. We proudly share with you the stories of our farmers and their practices. Our charcuterie is made in-house by chefs Bradley & Maurer and team. Honoring tradition and the values of our shop, we make all of our products from the same whole animals from which we cut our steaks and chops.
